Staff Writer / Barista

Lizzie Laughton

Lizzie has been working at Hips since 2020 and started her coffee career when she was 18 and fresh out of sixth-form. Now four years later she's a fully-fledged barista and front-of-house specialist, but now fresh out of university with an English degree under her belt instead (and slightly less fake tan.) Despite living in Bristol during her uni years, Lizzie was born and raised in The Forest of Dean.

Although relatively new on the international journalism scene, Lizzie's got plenty of writing experience under her belt. At university, she actively wrote and edited for the institution's student newspaper, The Epigram, and its sister magazine, The Croft. One of her most popular pieces during her time was centered around the University of Bristol's digital dialogue project, a research program aiming to understand the relationship between mental health and social media use amongst young people.

Although Lizzie does enjoy writing about political issues, she's an avid foodie, and the coffee industry is still one of her first loves. A passionate baker and coffee lover, she can often be found scanning the web for recipe ideas as well as watching endless latte art reels on Instagram. It's safe to say that her role at Hips Coffee combines the two things she knows best, writing and making coffee.

Outside of work (and baking), she likes to unwind by either catching up with friends, reading, or being with her favourite thing in the world—her Jack Russell Rolo.
